Instructions
- Combine Ingredients: In a large bowl or using a stand mixer, thoroughly combine the softened cream cheese, coconut cream, chopped green onion, grated ginger, minced garlic, shredded carrot, salt, Sriracha, lime zest, chopped cilantro, and black pepper until well blended and smooth.
- Shape and Chill: Spoon the cheese mixture into the center of a large sheet of plastic wrap. Pull up the sides tightly and either twist the top or secure with a twist tie to form a compact ball. Refrigerate for 2 to 3 hours to allow the flavors to meld and the cheese ball to firm up.
- Prepare Coating: While the cheese ball chills, chop the Sriracha Blue Diamond Almonds to your desired coarseness. Combine the chopped almonds with the chopped cilantro on a plate, mixing them lightly to distribute evenly.
- Coat the Cheese Ball: Remove the chilled cheese ball from the plastic wrap and place it directly onto the nut and cilantro mixture. Roll or gently press the cheese ball to coat its exterior evenly with the nut and herb mixture, ensuring a flavorful crust.
- Serve or Store: Once coated, you can wrap the cheese ball again for storage or serve immediately alongside crackers for dipping and spreading.
