Instructions
- Cook the Bacon: In a skillet over medium heat, cook the bacon slices until they are crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
- Scramble the Eggs: In a bowl, whisk together the eggs, milk (if using), salt, and black pepper until combined. Melt half a tablespoon of butter in a skillet over medium heat, then add the egg mixture. Gently scramble the eggs until they are just set and no longer runny. Remove from heat promptly to avoid overcooking.
- Assemble the Sandwiches: Lay two slices of bread on a flat surface. Place a slice of cheese on each piece. Then evenly distribute the scrambled eggs on top of the cheese, add two slices of crispy bacon, and layer another slice of cheese over the bacon. Top each sandwich with the remaining bread slices.
- Grill the Sandwiches: In a clean skillet, melt the remaining half tablespoon of butter over medium heat. Place the assembled sandwiches in the skillet and grill for 3 to 4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese has melted thoroughly.
- Slice and Serve: Remove the sandwiches from the skillet and transfer them to a cutting board. Slice each sandwich in half and serve immediately while hot and melty.
