Description

  • 2 jalapeño peppers, seeded and finely chopped

  • 1/2 teaspoon garlic powder

  • 8 eggroll wrappers

Instructions

  1. Prepare the filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, finely chopped jalapeño peppers, green onion, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated and evenly combined.
  2. Assemble the eggrolls: Lay one eggroll wrapper flat on a clean surface in a diamond shape. Place about 2 tablespoons of the cheese and bacon filling diagonally across the center of the wrapper. Fold the bottom corner over the filling, then fold both side corners toward the center, and finally roll tightly upwards to seal the eggroll completely. Use a little water on the edges to help seal if needed. Repeat this process for all wrappers and filling.
  3. Heat the oil: Pour vegetable oil into a deep skillet or fryer, enough to submerge the eggrolls. Heat the oil to 350°F (175°C), monitoring the temperature with a thermometer for best results.
  4. Fry the eggrolls: Carefully place the prepared eggrolls seam side down into the hot oil. Fry them in batches, making sure not to overcrowd the pan. Cook until they turn golden brown and crispy, approximately 3 to 4 minutes. Turn occasionally if needed to ensure even frying.
  5. Drain and serve: Remove the eggrolls from the oil with a slotted spoon and drain on paper towels to remove excess oil. Serve hot with your choice of dipping sauces such as ranch, sweet chili sauce, or sour cream for a delicious appetizer or snack.
