  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice

  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter (cut into small pieces)

For Topping:

  • 1 egg (beaten, for egg wash)
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Prepare the crust: Roll out one pie crust and fit it into a 9-inch pie plate.
  3. Make the filling: In a large bowl, combine pitted cherries, sugar, cornstarch, lemon juice, almond extract, and cinnamon. Pour into pie crust.
