Description

This Balsamic Grilled Chicken with Spicy Honey Bacon Glaze is a luscious, flavorful dish perfect for a quick yet impressive meal. Marinated in a tangy balsamic mixture and grilled to juicy perfection, the chicken is topped with a sweet and spicy glaze made from crisp bacon, honey, and hot sauce. Serve with grilled vegetables or your favorite sides for a delightful feast.

Ingredients

Scale

For the Chicken and Marinade

  • 4 chicken breasts (left whole or cut into thick strips diagonally)
  • 1/3 cup balsamic vinegar
  • 3/4 cup olive oil (or vegetable oil)
  • 3 tablespoons brown sugar
  • 2 tablespoons steak seasoning

For the Spicy Honey Bacon Glaze

  • 6 slices bacon, chopped
  • 3/4 cup honey
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon hot sauce (such as Frank’s)

Instructions

  1. Prepare the Marinade and Marinate the Chicken: In a large ziplock bag, combine 1/3 cup balsamic vinegar, 3/4 cup oil, 3 tablespoons brown sugar, and 2 tablespoons steak seasoning. Add the chicken breasts ensuring they are well coated. Seal the bag and refrigerate for a few hours or up to 2-3 days for deeper flavor.
  2. Preheat the Grill: Heat your grill to medium-high, making sure the grates are clean and lightly oiled to prevent sticking.
  3. Cook the Bacon: In a large pan over medium heat, cook the chopped bacon until it becomes crisp. Remove the bacon onto a paper-towel-lined plate to drain excess grease and cool. Once cooled, crumble if not already chopped.
  4. Make the Glaze: Drain most of the bacon grease from the pan, leaving a small amount to flavor the glaze. Add the honey, Worcestershire sauce, and hot sauce to the pan. Let the mixture bubble gently over medium heat, then stir in the cooked bacon. Cook for 1-2 minutes until the glaze thickens slightly, then remove from heat. It will continue to thicken as it cools.
  5. Grill the Chicken: Remove the chicken from the marinade and discard the marinade. Grill the chicken over medium-high heat for 2-4 minutes per side, or until the internal temperature reaches 165°F (75°C) and the meat is no longer pink inside.
  6. Serve: Plate the grilled chicken and spoon the spicy honey bacon glaze on top. Pair with grilled vegetables such as tomatoes and baby bell peppers or sides like baked beans for a complete meal.

Notes

  • Marinate chicken for at least 2 hours for best flavor, but up to 3 days is ideal.
  • If using salmon instead of chicken, grill for only 1-2 hours marinating and adjust grilling time accordingly.
  • Be sure to brush the grill grates with oil before cooking to prevent sticking.
  • The glaze will thicken further as it cools; rewarm gently if needed before serving.
  • Steak seasoning can be substituted with your favorite poultry seasoning blend.
