Description

  • 1 (4 oz) can diced green chiles

For Assembly:

  • 1 (15 oz) can red enchilada sauce
  • 8 flour tortillas (8-inch)
  • 2 cups shredded cheddar cheese (or Mexican blend)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • sour cream and sliced jalapeños (optional for serving)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Saute the beef: In a large skillet, sauté onion, garlic, and ground beef until browned. Add spices and green chiles.
  3. Assemble: Fill tortillas with beef mixture and cheese, roll up, and place in a baking dish.
  4. Bake: Pour enchilada sauce over the filled tortillas, top with cheese, and bake until bubbly.
  5. Serve: Garnish with cilantro and serve with optional sour cream and jalapeños.
