Description

Indulge in a slice of the Best Easy Coffee Cake, a delightful treat perfect for breakfast or dessert. This moist cake features a buttery crumb and a sweet cinnamon streusel topping, finished with a simple glaze for an extra touch of sweetness.

Ingredients

Scale

Main Cake:

  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Streusel Topping:

  • 1/3 cup brown sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons cold unsalted butter
  • 1/2 cup all-purpose flour

Glaze (optional):

  • 1/2 cup powdered sugar
  • 12 teaspoons milk or cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch or 9×9-inch baking dish.
  2. Cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla and sour cream.
  3. Whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
  4. Make the streusel: Mix brown sugar, granulated sugar, cinnamon, flour, and cold butter until crumbly.
  5. Layer the batter: Spread half the batter into the prepared pan, sprinkle half of the streusel, add remaining batter, and top with the rest of the streusel.
  6. Bake for 35–40 minutes until a toothpick comes out clean. Cool for 15 minutes.
  7. Optional glaze: Whisk powdered sugar and milk, then drizzle over the cake.

Notes

  • Substitute plain Greek yogurt for sour cream if needed.
  • Add nuts or chocolate chips to the streusel for extra flavor.
  • Freezes well—wrap tightly after cooling.
