Instructions
- Brown the Sausage: Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced beef sausage and cook until browned, about 4–5 minutes. Remove the sausage and set aside.
- Sauté Vegetables: In the same pan, sauté the diced onion and bell pepper for 3–4 minutes until softened. Stir in the minced garlic, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using), cooking for 1 more minute to release the spices’ aromas.
- Toast the Rice: Add the rice to the pan and toast it for 1–2 minutes, stirring frequently to prevent sticking and enhance flavor.
- Add Broth and Simmer: Pour in the chicken or beef broth and bring the mixture to a boil. Once boiling, reduce heat to low, cover the pan, and let it simmer gently for 15 minutes, allowing the rice to absorb the liquid.
- Combine Beans and Sausage: Stir in the drained black beans and browned sausage. Cover again and cook for an additional 5–7 minutes until the rice is tender and all the liquid is absorbed.
