Instructions

  3. Prepare dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and brown sugar.
  4. Combine wet ingredients: In a separate bowl, beat the egg, then add melted butter, and vanilla. Mix in soaked oats and milk.
  5. Mix batter: Combine wet and dry ingredients, then gently fold in blackberries.
  6. Make cinnamon swirl: Combine brown sugar and cinnamon in a small bowl.
  7. Fill muffin tin: Spoon batter into muffin cups, sprinkle with cinnamon swirl, and swirl gently.
  8. Bake: Bake for 18–22 minutes until a toothpick comes out clean.
  9. Cool: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
