Yogurt Mixture
- 1 cup plain Greek yogurt
- 2 tablespoons honey or maple syrup
- ½ teaspoon vanilla extract
Blueberry Swirl
- ½ cup fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 tablespoon water
- 1 teaspoon cornstarch (optional, for thickening)
- Silicone mold or mini muffin tin with liners
Instructions
- Prepare the blueberry sauce: In a small saucepan over medium heat, combine the blueberries, lemon juice, and water. Cook for 4–5 minutes, stirring occasionally, until the blueberries burst and release their juices. If a thicker swirl is desired, add the cornstarch and stir until the mixture thickens slightly. Remove from heat and let it cool to room temperature.
- Mix the yogurt base: In a mixing bowl, stir together the Greek yogurt, honey or maple syrup, and vanilla extract until smooth and well combined.
- Assemble the bites: Spoon a small amount of the yogurt mixture into each cavity of the silicone mold or lined mini muffin tin. Add a small dollop of the cooled blueberry mixture on top of each.
- Create the swirl effect: Use a toothpick or skewer to gently swirl the blueberry sauce into the yogurt, creating a marble effect.
- Freeze: Place the mold in the freezer for at least 2 hours or until the bites are fully set.
- Store and serve: Once frozen, remove the bites from the molds and store them in an airtight container in the freezer until ready to enjoy.
Notes
- Flavored yogurt can be used, but adjust the amount of sweetener accordingly as some flavored yogurts may be sweetened.
- Raspberries or strawberries can be substituted for blueberries for different flavor variations.
- For easy removal of the bites, use a silicone mold or line the muffin tins with paper liners.
