Description

These Brownie Mix Cookies are a quick and delicious treat combining the rich, fudgy flavor of brownies with the convenient, handheld form of cookies. Made with a boxed brownie mix, a few simple ingredients, and mini chocolate chips, this easy recipe yields chewy, chocolatey cookies perfect for any occasion.

Ingredients

Scale

Dry Ingredients

  • 1 18.3 ounce box Brownie mix
  • ½ cup All-purpose flour

Wet Ingredients

  • 2 Large eggs
  • 5 Tbsp. Vegetable oil
  • 1 Tbsp. Water

Add-ins

  • ½ cup mini chocolate chips

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set it aside to ensure the cookies don’t stick and bake evenly.
  2. Mix dry ingredients: Using a stand mixer or hand mixer, combine the boxed brownie mix with the all-purpose flour until the mixture is evenly blended.
  3. Add wet ingredients: Add the eggs, vegetable oil, and water to the dry mixture. Mix thoroughly until you achieve a smooth batter.
  4. Incorporate chocolate chips: Pour in the mini chocolate chips and fold them into the batter so they are evenly distributed.
  5. Scoop onto baking sheet: Using a large cookie scoop, place generous scoops of batter onto the prepared baking sheet, spacing each about 2 inches apart to allow for spreading.
  6. Bake: Bake the cookies in the preheated oven for 8 to 10 minutes, or until they are set and a toothpick inserted near the center comes out mostly clean with a few moist crumbs.
  7. Cool: Remove the cookies from the oven and allow them to cool on the baking sheet or a wire rack to a desirable temperature before serving.

Notes

  • For softer cookies, bake closer to 8 minutes; for firmer edges, bake closer to 10 minutes.
  • You can substitute mini chocolate chips with nuts or white chocolate chips for variety.
  • Allow cookies to cool completely if you prefer them to hold their shape better.
  • Store baked cookies in an airtight container at room temperature for up to 3 days.
