Ingredients
Scale
Salad Base
- 1 large romaine lettuce (or 2 small heads)
- 1/2 lb fusilli pasta (cooked al dente according to package instructions)
- 1 medium avocado (peeled, pitted and diced)
- 1 cup grape tomatoes (halved)
Toppings & Dressing
- 1/4 cup grated Parmesan cheese (to taste)
- 1/4 cup Caesar dressing (or added to taste)
- 1/2 cup croutons
- Sliced grilled chicken or shrimp (optional)
Instructions
- Cook the Pasta: Boil salted water and cook the fusilli pasta according to package instructions until al dente. Once cooked, rinse the pasta under cold water to stop the cooking process and prevent sticking. Drain and set aside.
- Prepare the Lettuce and Veggies: Rinse the romaine lettuce thoroughly and chop it into bite-sized pieces. Spin it dry using a salad spinner or pat dry with a clean towel to remove excess moisture, ensuring the dressing will coat the leaves better. Transfer the lettuce to a large mixing bowl, then add the cooled pasta, diced avocado, and halved grape tomatoes.
- Toss with Dressing and Finish: Pour Caesar dressing over the salad ingredients to taste. Toss everything gently but thoroughly to evenly coat the lettuce, pasta, avocado, and tomatoes with the dressing. Sprinkle the grated Parmesan cheese and croutons over the top. Add sliced grilled chicken or shrimp if using. Serve immediately for the best texture and flavor.
Notes
- For a vegetarian option, omit the grilled chicken or shrimp.
- Use fresh, ripe avocado for creaminess and best flavor.
- The croutons add crunch; add them just before serving to avoid sogginess.
- Adjust the amount of Caesar dressing to your preference for creaminess and flavor.
- This salad can be prepared in advance but add avocado right before serving to prevent browning.
