Description

This Cajun Sausage and Rice Skillet is a flavorful one-pan meal packed with smoky sausage, colorful bell peppers, and tender rice, all brought together with spicy Cajun seasoning for a quick and satisfying dinner ready in just 30 minutes.

Ingredients

Scale

Protein & Vegetables

  • 12 oz Smoked Sausage (e.g., Turkey or Beef), sliced
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced

Grains & Liquids

  • 1 cup Rice (long-grain white rice), rinsed
  • 1 ½ cups Chicken Broth

Seasonings & Oils

  • 2 tbsp Cajun Seasoning
  • 1 tbsp Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Heat the Skillet: Place a large skillet over medium heat and add the olive oil to warm up.
  2. Sauté Vegetables: Add diced onion, red and green bell peppers, and minced garlic to the skillet. Cook for about 5 minutes until the vegetables soften and become tender.
  3. Cook Sausage: Stir in the sliced smoked sausage and cook for another 5 minutes, allowing it to brown lightly and release its smoky flavor.
  4. Add Rice and Broth: Mix in the rinsed long-grain white rice, chicken broth, and Cajun seasoning. Stir everything to combine evenly.
  5. Simmer: Bring the mixture to a boil, then reduce heat to low. Cover the skillet and let it simmer for about 20 minutes until the rice is fully cooked and has absorbed the liquid.
  6. Finish and Serve: Fluff the rice with a fork, season with salt and pepper as needed, and garnish with optional parsley or green onions before serving.

Notes

  • For a spicier version, increase the amount of Cajun seasoning or add some cayenne pepper.
  • You can substitute smoked sausage with andouille sausage or any sausage of your choice.
  • Make sure to rinse the rice before cooking to prevent it from becoming too sticky.
  • If you want a vegetarian version, replace smoked sausage with vegetarian sausage and use vegetable broth instead of chicken broth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
