- 1/2 cup fresh mozzarella balls (bocconcini or ciliegine, halved)
- 1/4 cup fresh basil leaves (chopped)
- 2 tablespoons balsamic glaze
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Optional: a drizzle of lemon juice to prevent browning
Instructions
- Scoop out avocado flesh: Remove a small amount of flesh from each avocado half to create space for the filling. Chop the removed avocado flesh into small pieces.
- Prepare filling: In a medium bowl, combine cherry tomatoes, mozzarella, chopped avocado, and basil. Drizzle with olive oil and season with salt and black pepper. Toss gently to combine.
- Fill avocados: Spoon the Caprese mixture evenly into each avocado half. Drizzle with balsamic glaze just before serving. Add lemon juice if desired.
