For the Crust:
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup cold unsalted butter (cubed)
- 1 cup chopped pecans
For the Cheesecake Layer:
- 1 package (8 oz) cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
Additional:
- 1/2 cup caramel sauce (plus more for drizzling)
Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- Make the crust: In a medium bowl, combine flour and brown sugar. Cut in the cold butter until crumbly. Stir in chopped pecans. Press mixture into the pan to form a crust. Bake for 15 minutes.
- Prepare the cheesecake layer: Beat cream cheese and sugar until smooth. Add egg and vanilla, mix until combined. Spread over the crust.
- Add the caramel: Drizzle 1/2 cup of caramel sauce over the top and swirl with a knife. Bake for 25–30 minutes until set.
- Cool and chill: Let cool, then chill for at least 1 hour before slicing. Drizzle with more caramel before serving if desired.
Notes
- Use a thick caramel sauce for best results.
- Bars can be stored in the refrigerator for up to 4 days.
- To enhance flavor, consider toasting the pecans before adding them to the recipe.
