For the Caramel Popcorn:

  • 8 cups popped popcorn
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar (packed)
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla extract

For the Chocolate Dome:

  • 12 oz semi-sweet or dark chocolate (chopped or chips)
  • 1 tablespoon coconut oil (optional, for shine and easy melting)

For the Filling (optional):

  • Whipped cream, chocolate mousse, or ice cream for serving inside the dome

Instructions

  1. To make the caramel popcorn: Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper. In a saucepan, melt the butter over medium heat. Stir in brown sugar, corn syrup, and salt. Bring to a boil, then simmer for 4–5 minutes without stirring. Remove from heat and stir in baking soda and vanilla. Immediately pour over the popped popcorn and toss to coat evenly. Spread the coated popcorn on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes. Let cool completely.
  2. To make the chocolate dome: Melt chocolate and coconut oil in a heatproof bowl over a saucepan of simmering water or in short bursts in the microwave. Stir until smooth. Using silicone dome molds, brush or spoon a thick layer of chocolate into each cavity. Chill for 10–15 minutes, then apply a second coat. Chill again until fully set and firm. Carefully unmold the chocolate domes.
  3. To assemble: Gently fill each dome with a handful of caramel popcorn. Optionally, place a scoop of ice cream or mousse underneath the dome on a serving plate. Place the filled chocolate dome on top. For a dramatic presentation, pour warm caramel or chocolate sauce over the dome at the table to crack it open and reveal the popcorn inside.

Notes

  • You can make the domes a day ahead and store them in a cool, dry place.
  • Use dark chocolate for a richer flavor or white chocolate for a twist.
