Apple Sauce Ingredients
- 3 gala apples, peeled, quartered, cored, and thinly sliced
- 1/4 cup caster sugar (superfine sugar)
- 2 tablespoons sherry vinegar
- 50 grams (3 ½ tablespoons) unsalted butter
- 1 pinch of salt
Instructions
- Caramelize the Sugar: Place the caster sugar in a medium saucepan over low heat. Gently shake the pan to spread the sugar evenly. Allow a few minutes for the edges to start melting and turning golden. Swirl the pan occasionally to encourage even melting without stirring to prevent crystallization.
- Cook the Apples: Once the sugar is completely melted and caramelized, add the sliced apples and sherry vinegar to the pan. Mix well and cook for 8 to 10 minutes, stirring occasionally, until the apples are fully softened.
- Add Butter and Blend: Add the unsalted butter and stir until it is mostly melted into the mixture. Using a stick blender, blend the apple mixture until smooth. Tilt the saucepan as needed to fully submerge the blender head, avoiding splattering.
- Serve: The apple sauce is ready to serve. It pairs excellently with slow-roasted crispy pork belly or any pork dishes. It also works well in sweet applications.
Notes
- Use gala apples for a sweet, aromatic flavor, but feel free to substitute with other apple varieties if preferred.
- Do not stir the sugar while melting to prevent crystallization; swirling the pan is sufficient.
- The apple sauce can be served warm or chilled depending on your preference.
