Description

These Cheesy Chicken Mince Fritters with Broccoli are a delicious and nutritious baked snack or light meal. Fritters

  • 500 g / 1 lb chicken mince (ground chicken, or turkey or pork)
  • 1 garlic clove, minced
  • 1 egg
  • ¾ cup panko breadcrumbs
  • 2 packed cups broccoli, soft cooked & finely chopped (approx. 1 head)
  • ¾ cup finely chopped shallots
  • 1 ½ – 2 cups shredded mozzarella (or other cheese of choice)
  • ¾ tsp salt (reduce to ½ tsp if using a flavoured cheese)
  • Black pepper, to taste
  • Oil spray, for greasing

Herbed Yogurt Sauce

  • â…” cup plain yoghurt
  • 1/8 tsp dried dill
  • 1/8 tsp dried parsley
  • 1/8 tsp dried chives
  • ¼ tsp onion powder
  • ½ garlic clove, minced
  • 1 – 2 tsp extra virgin olive oil
  • Squeeze of lemon juice (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (390°F). Line a baking tray with baking paper or spray it with oil to prevent sticking.
  2. Mix Fritter Ingredients: In a large mixing bowl, combine the chicken mince, minced garlic, egg, panko breadcrumbs, finely chopped cooked broccoli, chopped shallots, shredded mozzarella, salt, and black pepper. Mix thoroughly until well combined.
  3. Shape the Fritters: Using about ¼ cup of the mixture, pat into fritter shapes approximately 6 cm (2.25 inches) wide and about 1 cm (2/5 inch) thick. Note that they will shrink and become a bit thicker during baking.
  4. Prepare for Baking: Arrange the shaped fritters on the lined baking tray. Generously spray the tops with oil to help them brown and crisp up.
  5. Bake the Fritters: Bake in the preheated oven for 15 minutes. Then carefully flip each fritter, spray the tops again with oil, and bake for an additional 8 to 10 minutes until they turn golden brown and cooked through. Serve immediately with the prepared sauce.
  6. Prepare the Sauce: While the fritters are baking, combine the yogurt, dried dill, parsley, chives, onion powder, minced garlic, olive oil, and optional lemon juice in a bowl. Add salt and pepper to taste. Let the sauce sit for at least 20 minutes to allow flavors to meld.

  • Note 1: You can substitute chicken mince with turkey or pork mince if preferred.
  • Note 2: Soft cooking the broccoli before finely chopping ensures a tender texture in the fritters.
