For the Shrimp:

  • 8 ounces medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

For the Sandwich:

  • 4 slices sourdough or crusty bread
  • 2 tablespoons butter, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Cook the Shrimp: In a skillet over medium heat, warm the olive oil. Add the shrimp, garlic, red pepper flakes, salt, and pepper. Cook for 2–3 minutes per side, or until the shrimp are pink and cooked through. Remove from heat and chop the shrimp into bite-sized pieces.
  2. Assemble the Sandwich: Butter one side of each slice of bread. Place two slices, butter-side down, on a skillet over medium-low heat. Top each slice with a mix of mozzarella and cheddar cheese, then add half of the shrimp mixture. Sprinkle with parsley if using. Top with the remaining bread slices, butter-side up.
  3. Grill the Sandwich: Cook for 3–4 minutes per side, pressing gently, until golden brown and the cheese is melted. Slice and serve hot.

Notes

  • For a bolder flavor, add a thin layer of garlic aioli or pesto to the inside of the bread.
  • You can also use pre-cooked shrimp to save time.
