Egg Rolls:
- 8 egg roll wrappers
Cheesecake Filling:
- 1 cup cream cheese (softened)
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Additional:
- 1 cup cherry pie filling
- Vegetable oil for frying
- Optional: powdered sugar for dusting
Instructions
- In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth. Place an egg roll wrapper on a clean surface with a corner facing you.
- Spoon about 1 tablespoon of the cream cheese mixture in the center, then top with 1 tablespoon of cherry pie filling. Fold the bottom corner over the filling, then fold in the sides and roll up tightly, sealing the edge with a dab of water.
- Repeat with remaining wrappers and filling. Heat about 2 inches of vegetable oil in a deep pan over medium heat until it reaches 350°F.
- Fry the egg rolls in batches for 2 to 3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels. Cool slightly, then dust with powdered sugar if desired. Serve warm or chilled.
Notes
- These can be made ahead and stored in the fridge before frying.
- Try other pie fillings like blueberry or apple for variety.
- Bake instead of fry at 400°F for 15–18 minutes for a lighter version.
