Egg Rolls:

  • 8 egg roll wrappers

Cheesecake Filling:

  • 1 cup cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Additional:

  • 1 cup cherry pie filling
  • Vegetable oil for frying
  • Optional: powdered sugar for dusting

Instructions

  1. In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth. Place an egg roll wrapper on a clean surface with a corner facing you.
  2. Spoon about 1 tablespoon of the cream cheese mixture in the center, then top with 1 tablespoon of cherry pie filling. Fold the bottom corner over the filling, then fold in the sides and roll up tightly, sealing the edge with a dab of water.
  3. Repeat with remaining wrappers and filling. Heat about 2 inches of vegetable oil in a deep pan over medium heat until it reaches 350°F.
  4. Fry the egg rolls in batches for 2 to 3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels. Cool slightly, then dust with powdered sugar if desired. Serve warm or chilled.
