- 1/2 cup sour cream

- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For Assembly:
- 8 small flour or corn tortillas
- 1 cup green enchilada sauce
- 1/2 cup shredded cheddar cheese (optional)
- Sliced green onions and extra cilantro for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the filling: In a large bowl, combine the shredded chicken, Monterey Jack cheese, sour cream, cilantro, lime juice, lime zest, cumin, garlic powder, salt, and pepper. Mix well.
- Assemble the enchiladas: Warm tortillas, spoon chicken mixture into each, roll tightly, and place seam-side down in a baking dish.
- Add sauce and bake: Pour green enchilada sauce over enchiladas, add cheddar cheese if desired, and bake for 20-25 minutes.
- Garnish and serve: Garnish with green onions and cilantro before serving.

- For a spicier version, add chopped green chilies or hot sauce to the filling.
