- 1 cup mashed ripe bananas (about 2 medium bananas)
- 3/4 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter (plus more for greasing)
- 1/3 cup mini chocolate chips
Instructions
- Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Wet Ingredients: In a separate bowl, combine the mashed bananas, buttermilk, egg, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
- Gently fold in the mini chocolate chips.
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
- Flip and cook another 1–2 minutes until golden brown and cooked through.
- Repeat with the remaining batter.
- Serve warm with maple syrup or extra banana slices if desired.
Notes
- You can substitute buttermilk with 3/4 cup milk mixed with 2 teaspoons of lemon juice or vinegar.
- For a dairy-free version, use plant-based milk and dairy-free chocolate chips.
