For the Rice Krispies Treats:
- 3 tablespoons unsalted butter
- 1 (10 oz) bag mini marshmallows
- 6 cups Rice Krispies cereal
- 1/2 cup chopped maraschino cherries (drained and patted dry)
- 1/2 teaspoon almond extract
For the Chocolate Topping:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening
Instructions
- Prepare the Rice Krispies Treats: Lightly grease a 9×13-inch baking dish. Melt butter in a saucepan over medium heat. Add marshmallows, stir until melted. Remove from heat, mix in almond extract. Fold in Rice Krispies and cherries. Press into prepared dish.
- Add the Chocolate Topping: Melt chocolate chips and coconut oil in the microwave, then pour over treats. Spread evenly. Let set before slicing.
Notes
- Make sure cherries are dried well to avoid excess moisture.
- For extra cherry flavor, add a bit of cherry syrup to the marshmallow mix.
- White or dark chocolate can be used instead of semi-sweet.
