  • 4 oz baking chocolate, chopped or ½ cup chocolate chips
  • 8 cups Cocoa Rice Krispies cereal

Instructions

  1. Prepare the baking dish: Lightly spray a 9×13 inch baking dish with non-stick cooking spray and set aside for later.
  2. Melt the butter: In a large pot or Dutch oven, melt the salted butter over low heat, stirring gently to avoid burning.
  3. Add and melt marshmallows: Add the entire bag of marshmallows into the melted butter. Stir continuously until the marshmallows have completely melted and the mixture is smooth.
  4. Add chocolate and flavorings: Stir in the chopped baking chocolate (or chocolate chips), peppermint extract, and espresso powder. Continue stirring on low heat until the chocolate is fully melted and incorporated into the marshmallow mixture.
  5. Mix in the cereal: Remove the pot from heat. Gradually fold in the 8 cups of Cocoa Rice Krispies, carefully combining until all the cereal is coated evenly and the mixture becomes sticky.
  6. Transfer and shape: Using a rubber spatula sprayed with non-stick spray, transfer the sticky mixture to the prepared baking dish. Press and flatten the top evenly to form a compact layer.
  7. Let set: Allow the Rice Krispie treats to rest at room temperature for about 20 minutes until they are firm and set.
  8. Cut and decorate: Slice the solidified treats into 12 even pieces. Melt the white, red, and green candy melts separately and drizzle or decorate the treats as desired. Sprinkle assorted sprinkles on top for a festive finish. Enjoy!
