  • ¼ cup chopped fresh basil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Make the Balsamic Reduction: In a small saucepan over high heat, combine the balsamic vinegar and honey. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook until the liquid is reduced by about half and thickened to a syrupy consistency, approximately 10 to 15 minutes. Be careful not to overcook it as it can become too thick and sticky. Once ready, remove from the heat and set aside.
  2. Assemble the Salad: In a large mixing bowl, combine the halved cherry tomatoes, mozzarella ciliegine, and chopped fresh basil. Season with kosher salt and freshly ground black pepper to taste. Gently toss the ingredients together to mix well.
  3. Dress the Salad: Drizzle the balsamic reduction over the salad gradually. Toss the salad lightly after each addition to evenly coat the ingredients. Taste as you go and add more reduction according to your preference. Serve immediately for the freshest flavor.
