Instructions
- Slice Chorizo: Cut the chorizo into 8mm (approximately 1/3 inch) thick slices on a slight angle to maximize surface area for browning.
- Prepare Sauce: In a bowl, combine pineapple juice, ketchup, hot sauce, brown sugar, minced garlic, salt, and pepper. Mix thoroughly to create the sweet and spicy sauce base.
- Mix Thickener: In a small separate bowl, stir together cornflour and water (or pineapple juice) until smooth to create the thickener slurry.
- Cook Chorizo: Heat 2 teaspoons of oil in a skillet over medium-high heat. Add chorizo slices and cook for about 3 minutes, turning occasionally, until golden brown and crisp on both sides.
- Simmer with Sauce: Pour the prepared sauce over the browned chorizo in the skillet. Reduce heat to a simmer and cook for 3 minutes to let the flavors meld and for the sauce to heat through.
- Thicken Sauce: Quickly stir in the cornflour slurry, mixing well to combine. Simmer for 45 seconds to 1 minute until the sauce thickens and coats the chorizo evenly.
