This quick and flavorful Chow Mein Ramen Noodles recipe combines tender chicken, crunchy coleslaw mix, fresh beansprouts, and vibrant green onions with classic Asian sauces, all tossed with ramen noodles in a hot skillet for a delicious and satisfying stir-fry perfect for a speedy weeknight dinner.

- 200g/7oz chicken, sliced (thigh or breast)
Vegetables
- 2 garlic cloves, minced
- 200g/7oz pre-shredded coleslaw mix (cabbage and carrot)
- 3 green onion stems, cut into 5cm/2″ lengths (white and green parts separated)
- 1 heaped cup beansprouts
Noodles
- 2 ramen or instant noodle cakes, discard seasoning
Sauces & Oils
- 1 tbsp oil (for cooking)
- 1.5 tbsp light soy sauce
- 1.5 tbsp oyster sauce
- 1 tbsp Chinese cooking wine or mirin
- 2 tsp toasted sesame oil
- 1 tsp white sugar (skip if using mirin)
Liquids
- 1 cup (250 ml) water
Instructions
- Prepare Sauce: In a bowl, combine light soy sauce, oyster sauce, Chinese cooking wine or mirin, toasted sesame oil, and white sugar (if not using mirin). Mix well and set aside.
- Heat Oil and Garlic: Heat 1 tablespoon of cooking oil in a large skillet over high heat. Add the minced garlic and cook for about 10 seconds until fragrant.
- Cook Chicken: Add the sliced chicken to the skillet. Stir-fry until the chicken mostly changes color from pink to white, indicating it is nearly cooked.
- Add Sauce: Pour the prepared sauce over the chicken and cook together for 1 minute to let the flavors meld.
- Add Vegetables: Add the coleslaw mix and the white part of the green onions to the skillet. Stir-fry for 1 1/2 minutes until the cabbage wilts slightly.
- Make Room for Noodles: Push the chicken and vegetables to one side of the skillet to create space for the noodles.
- Add Water and Noodles: Pour 1 cup of water into the cleared side of the skillet. Break the ramen noodle cakes and place them side by side in the water.
- Cook Noodles: When the water begins to simmer, cook the noodles for 45 seconds. Flip them carefully and cook for another 30 seconds to soften evenly.
- Combine and Toss: Loosen the noodles with a spatula. Add the beansprouts and the green part of the green onions. Toss everything energetically for 1 1/2 to 2 minutes until the sauce is reduced and coats the noodles thoroughly.
- Serve: Serve the chow mein ramen noodles immediately while hot and flavorful.
Notes
- Discard the seasoning packets from instant ramen noodles as they are not used in this recipe.
- Pre-shredded coleslaw mix usually contains cabbage and carrot, making it convenient for stir-frying.
- The sugar enhances the flavor balance unless mirin is used, which adds sweetness on its own.
- Toasted sesame oil provides a rich, nutty aroma and should be added to the sauce mixture.
