Ingredients
Scale
Main Ingredients
- 4 whole corn cobs
- 3 tbsp extra virgin olive oil
- 50g/3 tbsp unsalted butter
- 1 garlic clove, finely minced
Seasoning
- 1 1/2 tsp garlic powder
- 2 1/2 tsp smoked paprika (or ordinary paprika), plus more for garnish if desired
- 2 tsp cooking/kosher salt
- 2 tsp black pepper
Garnish (optional)
- 2 tbsp parsley or coriander/cilantro, roughly chopped
Instructions
- Prepare the Corn: Clean the corn cobs and remove the husks and silk. Using a sharp knife, carefully cut each corn cob into quarters lengthwise to create ‘ribs’. This shape will help them cook evenly and create a rib-like appearance.
- Make the Seasoning Mix: In a small bowl, combine the garlic powder, smoked paprika, salt, and black pepper. Mix well to create a uniform spice blend.
- Season the Corn Ribs: Brush the corn ribs generously with the extra virgin olive oil. Sprinkle the prepared seasoning evenly over all sides of the corn ribs, pressing lightly to adhere the spices.
- Prepare the Garlic Butter: In a small pan or microwave-safe bowl, melt the unsalted butter with the finely minced garlic until fragrant and well combined. Be careful not to brown the garlic; the butter should just be melted and infused.
- Cook the Corn Ribs: Preheat the oven to 200°C (390°F). Arrange the corn ribs on a baking tray lined with parchment paper or a wire rack. Brush the garlic butter over each rib for extra flavor and moisture. Bake for about 20-25 minutes, turning halfway through to ensure even cooking, until the corn ribs are golden, crispy on the edges, and tender inside.
- Garnish and Serve: Once cooked, remove the ribs from the oven and brush with any remaining garlic butter. Sprinkle extra smoked paprika and freshly chopped parsley or coriander/cilantro on top if desired. Serve warm as a snack or side dish.
Notes
- Cutting the corn carefully into ribs ensures even cooking and easy handling.
- Using smoked paprika adds a deep smoky flavor but you can use regular paprika if preferred.
- Brushing the corn ribs with garlic butter before and after baking enhances flavor and keeps the ribs moist.
- You can cook corn ribs on a grill or air fryer as alternatives, adjusting cooking times accordingly.
- Be careful not to overcook to avoid drying out; the ribs should be tender but still have a slight crunch.
