Instructions

  1. Prepare the Corn: Shuck the ears of corn and remove all silk. Boil the corn in a large pot of water for 5-7 minutes until tender. Remove from water and let cool. Once cooled, cut the kernels off the cob carefully.
  2. Chop Vegetables: Finely chop the red onion and place it into a large mixing bowl. Dice the tomatoes, removing seeds if desired for less moisture, and add them to the bowl.
  3. Prepare Jalapeño: Slice the jalapeño pepper in half, remove the seeds to reduce heat, and mince it finely. Add the minced jalapeño to the mixing bowl with the onions and tomatoes.
  4. Add Corn Kernels: Once the corn has cooled and kernels are removed, add them to the mixing bowl with the other ingredients.
  5. Add Cilantro: Chop the fresh cilantro finely and add it to the bowl to incorporate fresh herbal notes.
  6. Add Lime Juice: Squeeze the juice of two fresh limes over the mixture, making sure to catch and discard any seeds.
  7. Season and Mix: Add salt and pepper to taste, then mix all the ingredients thoroughly until well combined.
