Instructions
- Prepare the Corn: Shuck the ears of corn and remove all silk. Boil the corn in a large pot of water for 5-7 minutes until tender. Remove from water and let cool. Once cooled, cut the kernels off the cob carefully.
- Chop Vegetables: Finely chop the red onion and place it into a large mixing bowl. Dice the tomatoes, removing seeds if desired for less moisture, and add them to the bowl.
- Prepare Jalapeño: Slice the jalapeño pepper in half, remove the seeds to reduce heat, and mince it finely. Add the minced jalapeño to the mixing bowl with the onions and tomatoes.
- Add Corn Kernels: Once the corn has cooled and kernels are removed, add them to the mixing bowl with the other ingredients.
- Add Cilantro: Chop the fresh cilantro finely and add it to the bowl to incorporate fresh herbal notes.
- Add Lime Juice: Squeeze the juice of two fresh limes over the mixture, making sure to catch and discard any seeds.
- Season and Mix: Add salt and pepper to taste, then mix all the ingredients thoroughly until well combined.
- Let Flavors Meld: Cover the bowl with plastic wrap or a lid and let the salsa sit for at least 15 minutes at room temperature to allow flavors to blend before serving.
