Description
Cosmic Brownie Protein Bites are a delicious and guilt-free snack that combines the nostalgia of childhood brownies with the power of protein. These no-bake bites blend chocolate or vanilla protein powder with almond or peanut butter, cocoa powder, and a touch of maple syrup to create a thick, rollable dough. Dipped in melted dark chocolate and topped with colorful rainbow sprinkles, they offer a perfect balance of indulgence and nutrition, making them an ideal treat for post-workout recovery or a healthy snack throughout the day.
Ingredients
Scale
Main Ingredients
- 1 cup protein powder (chocolate or vanilla)
- ½ cup almond butter or peanut butter
- ¼ cup cocoa powder
- 3 tablespoons maple syrup (or honey)
- 1–2 tablespoons milk of choice (if needed for moisture)
- ¼ cup quick oats (optional)
- ½ cup dark chocolate chips
- 1 teaspoon coconut oil (optional)
- 2 tablespoons rainbow sprinkles
Instructions
- Combine Dry and Wet Ingredients: In a medium bowl, mix together the protein powder, cocoa powder, nut butter, maple syrup, and optional oats until a thick dough forms.
- Adjust Dough Consistency: If the dough feels too dry or crumbly, add milk one tablespoon at a time until the mixture becomes firm yet easy to roll.
- Roll the Bites: Scoop approximately one tablespoon of dough and roll it between your hands to form small balls. Place each ball on a parchment-lined tray and continue until all the dough is used.
- Melt Chocolate: In a microwave-safe bowl or saucepan, melt the dark chocolate chips with coconut oil by heating in short intervals, stirring frequently until smooth and glossy.
- Coat and Decorate: Spoon or drizzle the melted chocolate over each protein bite, then immediately sprinkle the rainbow sprinkles on top to set before the chocolate hardens.
- Chill to Set: Place the tray in the fridge for 20–30 minutes to allow the chocolate topping to solidify completely.
- Store: Transfer the protein bites to an airtight container and store in the refrigerator or freezer to keep fresh. Enjoy them as a nutritious snack whenever desired.
Notes
- For a nut-free version, substitute almond or peanut butter with sunflower seed butter.
- If you prefer sweeter bites, increase the maple syrup or honey slightly.
- Using quick oats adds texture but can be omitted for a smoother bite.
- Coconut oil helps keep the melted chocolate glossy but can be left out if preferred.
- Store bites in the freezer for longer shelf life and thaw slightly before eating.
