Description

Wet Ingredients:

  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon orange zest

Additional:

  • 1 1/2 cups fresh or frozen cranberries, halved
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In a separate bowl, mix orange juice, vegetable oil, egg, and orange zest.
  4. Combine Mixtures: Add wet ingredients to dry ingredients, stirring until just combined.
  5. Add Cranberries and Nuts: Gently fold in cranberries and nuts if desired.
  6. Bake: Pour batter into the pan, smooth the top, and bake for 50–60 minutes.
  7. Cool and Serve: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a sweeter version, use sweetened dried cranberries.
