For the Mashed Potatoes:

For the Creamy Garlic Shrimp:
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1/2 cup of chicken broth
- 1 cup of heavy cream
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of lemon juice
- 1 tablespoon of chopped fresh parsley
- Salt and pepper, to taste
Instructions
- Prepare the Mashed Potatoes: Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add heavy cream and butter, then mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
- Cook the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, approximately 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- Make the Creamy Garlic Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any bits stuck to the skillet. Reduce the heat to medium-low and stir in heavy cream and Parmesan cheese until the cheese melts and the sauce becomes smooth. Add lemon juice and mix well. Season with additional salt and pepper if needed.
- Combine and Serve: Return the shrimp to the skillet and stir to coat them evenly with the creamy garlic sauce. Sprinkle with chopped fresh parsley. Serve the creamy garlic shrimp over the warm mashed potatoes. Garnish with extra Parmesan cheese and parsley if desired.
