This classic guacamole recipe is a quick and easy way to enjoy a creamy, flavorful avocado dip. Combining fresh onions, spicy jalapeños, zesty lime juice, and fragrant cilantro, it’s perfect for serving with corn chips or as a topping for your favorite Mexican dishes.

Base Ingredients
- 2 tbsp finely chopped white onion (or red, brown, or yellow)
- 1 tbsp finely chopped jalapeno or serrano chilli (adjust to taste)
- 1/2 tsp salt, plus more to taste
- 1/4 cup roughly chopped coriander/cilantro leaves
- 2 medium avocados (or 1 very large one)
- Lime juice, to taste (about 1/4 – 1/2 lime)
Optional Ingredients
- 1 ripe tomato, peeled, deseeded and chopped
Instructions
- Mash Aromatics: Place the finely chopped onion, jalapeño, salt, and half of the coriander on a cutting board. Using a fork, mash these ingredients together until they release their juices and form a rough paste. Alternatively, use a mortar and pestle to grind them into a paste for more intense flavor.
- Add Avocado and Cilantro: Transfer the mashed mixture into a bowl. Add the avocado and the remaining coriander. Mash everything together until you reach your desired consistency, whether chunky or smooth.
- Season to Taste: Taste your guacamole and adjust the seasoning accordingly. Add more salt if needed, squeeze in lime juice to achieve the perfect sour balance, and add extra chilli if you prefer more heat.
- Incorporate Tomato (Optional): If using tomatoes, gently fold them into the guacamole, making sure they are well incorporated without mashing them too much.
- Serve: Serve your freshly made guacamole immediately with corn chips or as a delicious accompaniment to your favorite dishes.
