Instructions

  3. Thicken the base: Sprinkle the flour evenly over the vegetables, stirring well to coat them. Cook for 1 minute to remove the raw flour taste and help thicken the soup later.
  4. Add broth: Slowly pour in the vegetable broth while stirring continuously to avoid lumps. Bring the mixture to a gentle boil to activate thickening.
  5. Simmer: Reduce heat to low and simmer the soup for 15–20 minutes, or until all the vegetables are tender and well cooked.
  6. Add creaminess: Stir in the milk or cream, season with salt and pepper to taste, and simmer for an additional 5 minutes to blend the flavors harmoniously.
  7. Optional blending: For extra creaminess, use an immersion blender to partially blend the soup, leaving some chunks for texture, and then reheat briefly before serving.
