Broccoli Cheddar Soup:
- 4 cups fresh broccoli florets (roughly chopped)
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 2 cups shredded carrots
- 4 cups low-sodium chicken broth (or vegetable broth)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg (optional)
- 1 cup heavy cream
- 2 tablespoons cornstarch (mixed with 2 tablespoons water)
- 2 1/2 cups shredded sharp cheddar cheese
Instructions
- Combine Ingredients: In the crockpot, mix broccoli, onion, garlic, carrots, broth, salt, pepper, and nutmeg. Cook on low for 4–5 hours or high for 2–3 hours.
- Puree Soup: Blend part of the soup for creaminess. Alternatively, blend half and return to the pot.
- Add Cream: Stir in cream and cornstarch slurry. Cook for 20–30 minutes until slightly thickened.
- Melt Cheese: Reduce heat, add cheddar gradually, and stir until smooth. Serve hot.
Notes
- For a lighter version, use milk or half-and-half instead of cream.
- Add crushed red pepper for heat.
