Scale
Chicken and Seasoning
- 1 1/2 pounds boneless, skinless chicken breasts or thighs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
Sauce
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup low-sodium chicken broth
Other
- 1 (6-ounce) box stuffing mix
- 1 1/2 cups frozen green beans or mixed vegetables (optional)
- Fresh parsley for garnish (optional)
Instructions
- Prepare the chicken: Place the chicken breasts in the bottom of the crockpot. Season evenly with garlic powder, onion powder, and black pepper to enhance the flavor.
- Mix the sauce: In a medium bowl, combine the cream of chicken soup, sour cream, and low-sodium chicken broth. Stir until the mixture is smooth and well blended.
- Assemble layers: Spread the creamy soup mixture evenly over the seasoned chicken in the crockpot.
- Add the stuffing: Sprinkle the dry stuffing mix from the box evenly over the sauce layer. If using, spread the frozen green beans or mixed vegetables over or around the stuffing to incorporate extra veggies.
- Cook: Cover the crockpot. Cook on low setting for 4 to 6 hours or on high setting for 2.5 to 3.5 hours, until the chicken is fully cooked and tender.
- Finish and serve: Before serving, fluff the stuffing gently with a fork to separate the crumbs. Garnish with chopped fresh parsley if desired and serve warm for a comforting meal.
Notes
- You can substitute cream of mushroom or cream of celery soup for a different flavor profile.
- For a crispier stuffing texture, transfer the stuffing to a baking dish and broil for a few minutes before serving.
