Instructions
- Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Place the beef chuck roast in the skillet and sear it on all sides for about 2–3 minutes per side, until a brown crust forms. This step locks in flavor and enhances the texture.
- Prepare Crockpot Ingredients: Transfer the seared roast to the crockpot. Add sliced onion, minced garlic, diced tomatoes (with juices), beef broth, chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and optional crushed red pepper flakes directly into the crockpot around the beef.
- Cook the Beef: Cover the crockpot and cook on low for 8–10 hours or on high for 4–5 hours. The beef is done when it becomes fork-tender and easy to shred.
