- Preheat Oven: Preheat your oven to 200°C (400°F) or 180°C fan-forced. Line a baking tray with foil and place a wire rack on top. Spray the rack lightly with oil to prevent sticking.
- Prepare Crumbing Bowls: Set out three medium bowls for your crumb coating process – one with flour, one with the beaten eggs, and one with panko breadcrumbs. Choose bowls wide enough to comfortably fit the drumsticks for easy coating.
- Mix Seasonings: In a small bowl, combine all the dried oregano, basil, garlic powder, smoked paprika, cayenne (if using), cooking salt, and black pepper. Add 1 tablespoon of this seasoning mix to the flour, then add the remaining seasoning to the panko breadcrumbs. Stir both well to evenly distribute the flavors.
- Crumb the Chicken: Pat the chicken drumsticks dry with paper towels to ensure the coating sticks well. Thoroughly coat each drumstick in the seasoned flour, shaking off any excess. Then dip into the beaten eggs, letting any excess drip away. Finally, roll and press the drumstick into the seasoned panko mixture until fully coated, including the handle area for a complete crunchy crust.
- Arrange and Spray: Place each crumbed drumstick on the prepared rack on the tray. Once all drumsticks are arranged, spray them generously with canola or your preferred oil spray to promote crispiness during baking.
- Bake and Turn: Bake the drumsticks for 25 minutes in the preheated oven. Then carefully turn the drumsticks over, spray the other side generously with oil, and bake for another 20 minutes. The chicken should be golden brown, crispy, and cooked through.
