Guacamole Filling
- 1/2 large avocado
- 1 tablespoon lime juice (from 1/2 lime)
- 1 tablespoon coconut oil (room temperature)
- 1 dash hot sauce
- 1/2 roma tomato (minced) or 3 cherry tomatoes, minced
- 1 tablespoon cilantro (minced), plus more for garnish
- Salt and pepper to taste
Instructions
- Steam the Eggs: Fill a pot with about 3 inches of water and place a steamer attachment inside. Bring the water to a boil over high heat. Place the eggs in the steamer basket, cover with a lid, and steam for 12 minutes. Immediately transfer the eggs to an ice water bath to cool completely, then peel them. If you don’t have a steamer, you can boil the eggs in water directly for 12 minutes.
- Prepare the Filling: Cut the peeled eggs in half and remove the yolks. Place the yolks in a food processor, blender, or bowl. Add the avocado, lime juice, coconut oil, and a dash of hot sauce. Pulse until smooth or mash thoroughly with a fork to achieve a creamy consistency.
- Mix in Fresh Ingredients: Fold in the minced tomatoes and cilantro to the yolk mixture. Season with salt and pepper according to taste.
- Assemble the Deviled Eggs: Spoon the guacamole filling back into the egg whites. Garnish each filled egg with additional cilantro. Serve immediately for the best flavor, or refrigerate and allow to come to room temperature for 30 minutes before serving.

- If you don’t have a steamer basket, boiling the eggs directly for 12 minutes works just as well.
