Instructions
- Sauté Vegetables: Add the butter, olive oil, celery, and onion to a pot over medium-high heat and cook for 5 minutes, stirring occasionally to soften the vegetables and develop their flavors.
- Prepare Sausage: While the vegetables cook, chop the andouille sausage into bite-sized pieces.
- Cook Sausage: Add the chopped sausage to the pot and cook for another 5 minutes, stirring occasionally, allowing the sausage to brown and release its smoky flavor.
- Add Garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, careful not to burn it.
- Combine Ingredients: Stir in the chicken broth, Tony Chachere’s Creole Dirty Rice Mix, plain breadcrumbs, and chopped red bell pepper. Bring the mixture to a gentle boil over medium heat.
- Simmer Rice: Reduce the heat to medium-low or lower, cover the pot, and let the rice simmer for 25 minutes or until tender and most liquid is absorbed. Stir a few times throughout cooking to prevent sticking.
- Garnish and Serve: Remove from heat and garnish with chopped scallions and fresh parsley if desired. Serve immediately as a flavorful side dish.
