- 285g / 10 oz dark chocolate melts (chocolate chips, or chocolate block coarsely chopped)
- 2 tbsp (30g) unsalted butter
- 1/2 cup (125ml) cream (full fat, not low fat, not whipped)
Coating Options
- 1/2 cup desiccated coconut
- 1/4 cup unsweetened cocoa powder (Dutch Processed is darker, looks “posh”)
- 1/2 cup crushed peanuts (small, so can stick)
- 1/3 cup sprinkles or similar
- 1/4 cup icing sugar / powdered sugar
Instructions
- Make the Ganache: Place the dark chocolate, cream, and unsalted butter in a microwave-proof bowl. Microwave in four 30-second bursts on high, stirring well between each burst to combine the ingredients smoothly.
- Allow to Melt and Settle: Cover the bowl with a plate and let it stand for 5 minutes. Then stir the mixture until the chocolate is fully melted and the ganache is smooth and glossy.
- Chill the Ganache: Put the bowl in the refrigerator for 6 hours to let the ganache firm up. Avoid the temptation to freeze it, as slow chilling ensures the best texture for rolling.
- Prepare Work Surface: Place a dinner plate or tray in the refrigerator to chill, which will be used to hold the rolled truffles and keep them firm as you work.
- Shape and Coat the Truffles: Once chilled, scoop small spoonfuls of ganache and roll them between your palms to form smooth balls. Quickly roll each truffle into your choice of coating—desiccated coconut, cocoa powder, crushed peanuts, sprinkles, or icing sugar—and place on the chilled plate or tray. Repeat until all ganache is used.
