Pasta:

  • 8 oz fettuccine or penne pasta
  • 1 tbsp butter
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese

  • 1/4 cup chopped parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Prepare the pasta according to package instructions until al dente. Drain and set aside.
  2. Sear the chicken: Season chicken strips with 1 tablespoon of Cajun seasoning. Cook in olive oil until browned and cooked through. Set aside.
  3. Make the sauce: In the same skillet, sauté garlic in butter. Add cream, broth, remaining Cajun seasoning, and Parmesan. Cook until slightly thickened.
  4. Combine ingredients: Add tomatoes, bell peppers, cooked chicken, and pasta to the skillet. Toss to coat in the sauce.
  5. Season and serve: Adjust seasoning with salt and pepper. Garnish with parsley and serve hot.
