Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
  2. Steam vegetables: Steam the cauliflower and broccoli florets for 4–5 minutes until just tender but not mushy, then drain well and set aside to cool slightly.
  3. Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing for about 3–4 minutes until softened and fragrant.
  4. Mix ingredients: In a large mixing bowl, combine the cooked shredded chicken, steamed vegetables, sautéed onion and garlic, softened cream cheese, sour cream, mayonnaise, 1 cup shredded cheddar cheese, grated Parmesan cheese, paprika, Italian seasoning, salt, and black pepper. Stir thoroughly to create a creamy, well-incorporated mixture.
  5. Assemble casserole: Spread the mixture evenly into a greased 9×13-inch baking dish. Sprinkle the remaining 1/2 cup shredded cheddar cheese evenly over the top.
