Instructions
- Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
- Steam vegetables: Steam the cauliflower and broccoli florets for 4–5 minutes until just tender but not mushy, then drain well and set aside to cool slightly.
- Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing for about 3–4 minutes until softened and fragrant.
- Mix ingredients: In a large mixing bowl, combine the cooked shredded chicken, steamed vegetables, sautéed onion and garlic, softened cream cheese, sour cream, mayonnaise, 1 cup shredded cheddar cheese, grated Parmesan cheese, paprika, Italian seasoning, salt, and black pepper. Stir thoroughly to create a creamy, well-incorporated mixture.
- Assemble casserole: Spread the mixture evenly into a greased 9×13-inch baking dish. Sprinkle the remaining 1/2 cup shredded cheddar cheese evenly over the top.
- Bake: Bake in the preheated oven for 25–30 minutes, or until the casserole is hot, bubbly, and the cheese on top is melted and starting to lightly brown.
- Cool and garnish: Allow the casserole to cool slightly before serving. Garnish with freshly chopped parsley if desired for a fresh herbal touch.
