Main Ingredients
- 6 cups Rice Crispy cereal
- 1 package (10 oz) mini marshmallows
- 3 tablespoons unsalted butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Coloring and Decoration
- 1/2 teaspoon red food coloring
- 1/2 teaspoon green food coloring
- 1/2 cup festive sprinkles (optional)
Instructions
- Prepare the Baking Dish: Lightly grease a 9×13 inch baking dish with cooking spray or line it with parchment paper to ensure easy removal of the treats later.
- Melt Butter and Marshmallows: In a large saucepan over low heat, melt unsalted butter. Once melted, add mini marshmallows, stirring constantly until fully melted and smooth.
- Add Vanilla and Salt: Remove the saucepan from heat, then stir in vanilla extract and salt until well combined.
- Divide and Color Marshmallow Mixture: Split the melted marshmallow mixture equally into two bowls. Add red food coloring to one bowl and green food coloring to the other, mixing each thoroughly for even color.
- Mix in Cereal: Fold 3 cups of Rice Crispy cereal into each colored marshmallow mixture until the cereal is evenly coated.
- Press Red Mixture in Dish: Using a greased spatula or lightly greased hands, press the red Rice Crispy mixture firmly into one half of the prepared baking dish.
- Press Green Mixture in Dish: Press the green Rice Crispy mixture evenly into the other half of the baking dish, packing it down firmly as well.
- Add Sprinkles: Optionally, sprinkle festive sprinkles over the top of the pressed Rice Crispy treats for added decoration and fun texture.
- Cool the Treats: Allow the treats to cool at room temperature for about 30 minutes to set properly before cutting.
- Serve or Store: Cut into squares or desired shapes and enjoy immediately, or store in an airtight container for up to one week.
Notes
- Use a greased spatula or lightly greased hands to press the mixture to prevent sticking.
- To speed up cooling, place the baking dish in the refrigerator but be aware it may become slightly harder.
- Feel free to swap festive sprinkles for other holiday-themed toppings like crushed candy canes.
- For a gluten-free option, ensure to use gluten-free rice cereal.
