Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon vegetable oil

Broth:

  • 4 cups chicken broth
  • 1 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 tablespoon chili garlic sauce (or sambal oelek)
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves, minced

Additional:

  • 2 packs ramen noodles (discard seasoning)
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup shredded carrots
  • 2 soft-boiled eggs, halved
  • 2 green onions, sliced
  • 1 teaspoon toasted sesame seeds
  • Salt and pepper to taste

Instructions

  1. Prepare Chicken: Season the chicken breasts with salt and pepper. Cook in a large pot until golden brown. Slice thinly.
  2. Make Broth: Sauté garlic and ginger. Add miso paste, chili garlic sauce, soy sauce, sesame oil, broth, and water. Simmer with mushrooms and carrots.
  3. Add Noodles: Cook ramen noodles in the broth until tender. Adjust seasoning.
  4. Serve: Divide noodles and broth into bowls. Top with sliced chicken, eggs, green onions, and sesame seeds.
