Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon vegetable oil
Broth:
- 4 cups chicken broth
- 1 cup water
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 tablespoon chili garlic sauce (or sambal oelek)
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 2 garlic cloves, minced
Additional:
- 2 packs ramen noodles (discard seasoning)
- 1 cup sliced shiitake mushrooms
- 1/2 cup shredded carrots
- 2 soft-boiled eggs, halved
- 2 green onions, sliced
- 1 teaspoon toasted sesame seeds
- Salt and pepper to taste
Instructions
- Prepare Chicken: Season the chicken breasts with salt and pepper. Cook in a large pot until golden brown. Slice thinly.
- Make Broth: Sauté garlic and ginger. Add miso paste, chili garlic sauce, soy sauce, sesame oil, broth, and water. Simmer with mushrooms and carrots.
- Add Noodles: Cook ramen noodles in the broth until tender. Adjust seasoning.
- Serve: Divide noodles and broth into bowls. Top with sliced chicken, eggs, green onions, and sesame seeds.
Notes
- Adjust spice level with chili garlic sauce
- For richer broth, use full-fat chicken broth or add coconut milk
- Top with nori strips or bamboo shoots for extra texture
