For the Fried Chicken:
- 4 boneless, skinless chicken thighs or breasts
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- vegetable oil for frying
- 1/2 cup buffalo wing sauce
- 4 brioche buns
- 2 tablespoons melted butter (for toasting buns)
For the Blue Cheese Slaw:
- 2 cups shredded green cabbage
- 1/2 cup shredded carrots
- 1/4 cup crumbled blue cheese
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon celery seed
- salt and pepper to taste
Instructions
- Marinate the Chicken: In a bowl, whisk together buttermilk, garlic powder, paprika, salt, and pepper. Marinate the chicken in this mixture for at least 1 hour in the refrigerator.
- Prepare the Slaw: Mix all the slaw ingredients in a bowl and refrigerate until ready to use.
- Fry the Chicken: Dredge the marinated chicken in flour and fry in vegetable oil until golden brown and cooked through.
- Coat in Buffalo Sauce: Warm the buffalo sauce and toss the fried chicken in it until coated.
- Assemble the Sandwiches: Toast the brioche buns, then assemble the sandwiches with slaw, buffalo chicken, and the top bun. Serve immediately.
Notes
- You can use store-bought buffalo sauce or make your own by combining hot sauce with melted butter.
- For extra heat, add sliced jalapeños to the slaw or a drizzle of hot sauce on top.
