Scale
Granola Base Ingredients
- 3/4 cup oats
- 1/2 tsp cinnamon
- 1/4 cup almond butter
- 3-4 tbsp honey (adjust to desired sweetness)
- 1 tsp vanilla extract
Filling and Topping
- 1 1/2 cups Greek yogurt
- Berries of choice to top (such as strawberries, blueberries, raspberries)
Instructions
- Prepare the Granola Base: In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Stir the mixture until it forms a sticky dough. If the mix is too dry, gradually add a bit more almond butter and honey to ensure it holds together well.
- Form the Base Cups: Line a muffin pan with paper liners. Spoon a portion of the granola dough into the bottom of each muffin cup and press firmly with your fingers to create a solid and sturdy base layer.
- Add Yogurt and Toppings: Spoon a generous amount of Greek yogurt over the granola base in each muffin cup. Top with fresh berries and sprinkle any leftover granola dough on top for extra texture.
- Freeze the Cups: Place the muffin pan in the freezer and let the frozen yogurt granola cups set for at least 4 hours or until they are completely firm.
- Serve: Remove the cups from the freezer and let them thaw slightly for a few minutes to soften before enjoying as a cool, delicious treat.
Notes
- You can substitute almond butter with peanut butter or any nut butter of choice.
- Adjust the sweetness by varying the amount of honey to your preference.
- Use any berries or fresh fruit you like for topping to add variety.
- Store leftover frozen cups in an airtight container in the freezer for up to one week.
- If you don’t have paper liners, lightly grease the muffin pan to prevent sticking.
