Ingredients
Scale
Pancakes
- 1 cup all-purpose flour
- 2 Tbsp sugar
- 2 Tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 Tbsp butter, melted
- 1 large egg
- 3/4 cup Fruity Pebbles cereal (plus more for topping)
Topping
- 7 ounce jar marshmallow fluff
Instructions
- Mix dry ingredients: In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Add wet ingredients: Whisk in the milk, melted butter, and egg into the dry ingredients, mixing just until combined to avoid overmixing.
- Incorporate cereal: Gently stir in the Fruity Pebbles cereal, distributing it evenly throughout the batter.
- Preheat pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with spray oil or a small amount of butter.
- Scoop batter: Using a ¼ cup measuring cup, pour batter onto the skillet, spacing pancakes so they don’t touch.
- Cook first side: Cook until bubbles form on the surface and edges look set, about 1-2 minutes.
- Flip pancakes: Carefully flip and cook the other side for another 1-2 minutes until golden and cooked through.
- Keep warm: Remove cooked pancakes and keep warm while repeating the process with the remaining batter.
- Heat marshmallow fluff: Place marshmallow fluff in a microwave-safe bowl and microwave for 15-20 seconds, stirring. Repeat if needed until it reaches a drizzle consistency, watching carefully as it expands.
- Serve: Spoon the warmed marshmallow fluff over the pancakes and garnish with extra Fruity Pebbles if desired. Serve immediately.
Notes
- Use a non-stick skillet or griddle to prevent sticking and ensure easy flipping.
- Do not overmix the batter to keep pancakes light and fluffy.
- Heating marshmallow fluff makes it easier to drizzle over pancakes for an appealing presentation.
- Extra Fruity Pebbles on top add texture and make the dish more visually appealing.
- Keep cooked pancakes warm by placing them in a low oven (around 200°F) if cooking in batches.
