- 1 tsp garlic powder or 1 clove minced garlic

Potatoes
- 1 cup baby or Yukon gold potatoes, cubed
- 1 tbsp olive oil
- 1 tsp paprika
- Pinch of salt & garlic powder
- Salt & freshly cracked black pepper, to taste
Green Beans
- 1 cup green beans, trimmed
- 1 tsp olive oil
- 1 tsp garlic powder
- Pinch of salt
Instructions
- Prepare Potatoes: Preheat your oven to 425°F (220°C). In a bowl, toss the cubed potatoes with olive oil, paprika, a pinch of salt, garlic powder, and freshly cracked black pepper until well coated. Spread the potatoes evenly on a baking sheet and roast for 25-30 minutes until they are golden and crispy on the outside.
- Cook Steak: Season the ribeye or sirloin steak generously with salt, freshly cracked black pepper, and garlic powder or minced garlic. Heat a cast iron skillet over high heat and add olive oil or butter. Once the skillet is hot, sear the steak for 3-4 minutes on each side for medium-rare, adjusting the time if you prefer a different doneness. After cooking, let the steak rest for a few minutes to retain its juices.
- Sauté Green Beans: While the steak rests, heat a separate skillet over medium heat. Add olive oil, then the trimmed green beans. Sprinkle with garlic powder and a pinch of salt, sautéing for 5-6 minutes until the beans are tender but still crisp and vibrant green.
- Serve: Slice the rested steak against the grain and arrange it on plates alongside the crispy roasted potatoes and sautéed green beans. Sprinkle fresh parsley over the steak and veggies, and add fresh rosemary or thyme if desired, for an added herbal aroma and flavor.
