For the Grilled Cheese:

  • 4 slices sourdough or hearty sandwich bread
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon mayonnaise or additional softened butter for spreading

Instructions

  1. Sauté the Mushrooms: In a skillet over medium heat, melt 1 tablespoon of butter with olive oil. Add the sliced mushrooms and cook for about 6–8 minutes until browned. Stir in garlic, salt, pepper, and thyme, and cook for another 1–2 minutes. Remove from heat.
  2. Prepare the Sandwiches: Mix mozzarella and cheddar cheeses. Divide cheese mixture between two bread slices. Top with mushrooms, then remaining bread slices. Spread outside of sandwiches with mayonnaise or butter.
  3. Grill the Sandwiches: Heat remaining butter in a skillet over medium heat. Cook sandwiches for 3–4 minutes on each side until golden brown and cheese is melted. Slice and serve hot.
